Processing Description
Harvested by an experienced team with strict 20–21°Brix selection. Washed method with structured anaerobic pre-fermentation. Alexia intentionally stops fermentation when cherries reach 11.5–12°Brix — the point she identifies as ideal for balance and the clean varietal character of Parainema.
