Processing Description
Los Encinos Ocotillo is a fairly young plantation, only on its 3rd productive season. Harvested by hand in multiple rounds to ensure each cherry is at peak ripeness. Milling specs: 3 max defects, minimum screen size 15, hand selected by women.
